HOMEMADE TURKEY CHORIZO

INGREDIENTS:

1lb. 85/15 ground turkey

1 tsp cumin
-
1 tsp coriander
-
1 tsp kosher salt

1 tsp black pepper

3 tsp smoked paprika
-
3 tsp chipotle pepper, ground

2 tsp garlic
-
1 tsp oregano
-
1 tsp white vinegar
INSTRUCTIONS:

Mix all the dry spices and add to a large bowl with the ground turkey.

Once all the seasoning has been absorbed by the meat and is well mixed, add the vinegar and allow to marinate for 12-24 hours.

Preheat the Matador and cook until the turkey has reached an internal temp. of 165°F.
Note: This recipe is also great to use with ground beef, pork, and chicken cooked in bulk.
